Ragi is a whole grain that is gluten-free and a staple in South India

A whole grain one which contains all three parts of the kernel - the bran, germ and endosperm while refined grains are processed to retain only the endosperm. This makes whole grains healthier as they contain the fiber-dense bran and along with other essential nutrients that are not lost due to processing.
Ragi is consumed in the purest form. It is gluten free and this can easily be added with wheat to reduce it's stiffness while baking or cooking.
Kids who refuses to take ragi as such we can make them cakes or muffins and give them as healthier and innovative snack.

Ingredients:
3/4 th cup - ragi flour
1/4 th cup - wheat flour
1/2 teaspoon - baking powder
1/4 teaspoon - baking soda
1/3 rd cup - thick curd
3/4 th cup - jaggery water ( dissolve jaggery in water)
1/4 th cup - oil (vegetable oil)
1/2 teaspoon - vanilla extract
2 teaspoon - cocoa powder
1/4 th cup - wheat flour
1/2 teaspoon - baking powder
1/4 teaspoon - baking soda
1/3 rd cup - thick curd
3/4 th cup - jaggery water ( dissolve jaggery in water)
1/4 th cup - oil (vegetable oil)
1/2 teaspoon - vanilla extract
2 teaspoon - cocoa powder
For seasoning:
1/4 th cup - jaggery water
1/4 th cup - grated cashews
1/4 th cup - grated cashews
Procedure:
# Preheat the kadai for 15 mins with lid closed.
# Grease the cake tin with oil/ghee dust with flour and keep aside.
# Take the dry ingredients ragi flour,wheat flour,baking powder and baking soda seive it well (twice for the cake to be more soft) and keep aside.
# Take a mixing bowl add curd to it.
# Beat well for about 10 mins continuously.
# Add jaggery water into it and blend well.
# Add oil and vanilla extract to it and mix well till all bind together.
# Now add all dry ingredients into wet ingredients slowly and mix well add them in portions.
# Add cocoa powder to it and mix well.
# Add milk and stir if the batter is thick.
# Now pour the batter into cake tin and tap well.
( Tips: You can add few chocolates in the middle of batter if you want more delicious if not skip this step)
# Place the cake tin inside the kadai and bake for 30-40 mins ( check the cake often after 30 mins)
# Once it's baked remove the cake tin and allow to cool.
# Now pour the remaining jaggery water on the cake
# Allow to set for 5-10 mins. Sprinkle the grated cashews over it.
# Now remove the after it's completely cools down.
# Delicious ragi cake is ready for the bite.
